Peanut Butter Swirl

This homemade peanut butter swirl takes a bit more work than store-bought cookie mix-ins, but the results are absolutely worth it. Use it to stuff cookies, knead it into the dough for streaks of sweet peanut butter, all without the risk of melting and burning like peanut butter straight from the jar.

Ingredients

  • 0.5 oz Unsalted Butter, softened
  • 3.2 oz Coconut Oil, refined is best but virgin coconut oil can give a nice hint of coconut flavor.
  • 3.5 oz Peanut Butter Powder
  • 7 oz Powdered Sugar
  • 1/2 tsp Vanilla Extract
  • 1/4 tsp Diamond Crystal Kosher Salt or 1/8 tsp Table Salt

Directions

  1. In a larger bowl than you think you'll need, melt the butter and coconut oil in the microwave. Nuke them for 15 seconds at a time, stirring in between, until it is completely melted. Don't skip the stirring.
  2. Add the remaining ingredients to the bowl with the oil and butter. Make sure your hands are impeccably clean, and knead it all together until it is completely combined and forms a soft ball without any streaks of sugar or peanut butter powder.
  3. Store covered in the fridge until ready to use. If using in marbled cookies, remove from the fridge and allow to come to room temperature before kneading into your cookie dough. If using as a filling for stuffed cookies, use directly from the fridge.
